HomeGrilled Pizza › BBQ Chicken Pizza Recipe






Serves: 2 - 4

Prep time: 15 minutes

Cook time: 10 minutes

Indirect Heat: 500F - 525F

Note: the dough recipe rising time is 2 - 4 hours

What you'll need:

For the Dough recipe:

  • 2 cups all purpose flour
  • 1 teaspoon instant yeast
  • 1 teaspoon salt
  • 3/4 cup hot water (120F - 130F)
  • 1 teaspoon olive oil

    For the Toppings:
  • 1 cubed boneless, skinless chicken breast
  • 1 chopped red onion
  • 1 teaspoon black pepper
  • 4 slices cooked bacon, crumbled (optional)
  • 1/4 cup smokey flavored BBQ sauce
  • shredded mozzarella cheese

  • 1 tablespoon olive oil (to saute chicken)
  • 2 - 3 tablespoons cornmeal

  • 1 pizza stone Tip: don't overload the toppings on this pizza, let the chicken and bbq sauce shine through.

  • Step 1:
    Add the warm water and yeast to a large mixing bowl and stir to mix, let sit 5 minutes.

    Combine the rest of the pizza dough recipe ingredients to the bowl and stir lightly with a fork until the mixture starts to clump.

    Knead the mixture for 2 minutes with your fists and then form the dough into a ball.

    Place the dough in a glass bowl that's been coated or sprayed with cooking oil.

    Roll the dough over in the bowl several times so it's also coated with the oil and cover loosely with plastic wrap.

    Let rise for 2 - 4 hours in a warm draft-free location until doubled in size.

    Step 2:
    Cut the chicken and red onion into small 1/2" - 3/4" pieces and saute in a pan with 1 tablespoon olive oil and 1 teaspoon black pepper.

    Cook chicken fully and allow the onion to soften.

    Step 3:
    Sprinkle a little flour on your working surface.

    Place the dough on the floured surface and begin lightly working the dough outwards in even thickness and a shape that will fit on your pizza stone.

    Step 4:
    Sprinkle cornmeal over a pizza peel or large platter slightly bigger then the crust.

    Transfer the dough to the cornmeal covered peel or platter.

    This will make transferring the pizza to the BBQ much easier.

    Spread the BBQ Sauce evenly over the surface of the pizza, stay in a 1/2" from the edge.

    Depending on the size of crust you made you might need more than the 1/4 BBQ sauce indicated.

    Spread the cooked chicken, onion and bacon evenly over the top of the barbeque sauce.

    Top off this BBQ chicken pizza with as much mozzarella cheese as you desire.

    Step 5:
    Set up your grill or barbecue for indirect cooking.

    Place a pizza stone on the grates.

    Preheat grill to 500F - 525F.

    When the grill reaches temperature, cover the pizza stone generously with cornmeal to prevent sticking.

    Place the pizza on the stone and close the lid.

    Cook 8 - 14 minutes depending on how soft or crispy you want the crust. Check occasionally to make sure the crust isn't burning.

    Serve immediately.
